All she wanted for Christmas was a truckload of fresh coconuts to sip by the beach. A small woman-owned business based in Maui, Coconut Cowgirl started back in 2017 when Emma tried to purchase a truckload of drinking coconuts. Instead of young coconuts full of coconut water, she ended up with fully mature coconuts and a ton of coconut meat. Having been infatuated with fresh coconut milk since she first tasted it years before, that pile of coconuts quickly became fresh coconut milk and our famous vegan Coconut Bacon.
